Celebrate fair trade with this gorgeous Banana Loaf. Great as a substitute for breakfast!
- 140g Butter
- 140g Fair trade Caster Sugar
- 2 eggs
- 140g Self raising flour
- 1 teaspoon baking powder
- 2 fair trade bananas
- 50g Icing sugar
Line a loaf tin baking tray with greaseproof paper In a mixing bowl weigh out the butter and sugar.
Then cream together until lighter in colour and fluffy. Add the eggs to the mixing bowl and beat together.
Sieve in the flour and baking powder, then fold the mixture until you don’t see any more flour.
Mash the bananas in a small bowl and add to the cake mixture.
Spoon into the loaf tin and bake for 40-50 minutes at 180C, or until a knife inserted in the middle of the cake comes out clean.
Mix the icing sugar with a few drops of water until smooth and pour over the top of the cake once cooled.
