Place the following in a saucepan and melt together: light brown sugar, water, golden syrup, treacle (or dark brown sugar), ginger, cinnamon and orange zest.

With the remaining dough, roll out a base for your gingerbread house.
Bake in an oven at 180C or Gas Mark 4 for 10-15 minutes, it must be just golden brown.
Once it has cooled, make the icing to stick your house together.
To start gluing your house, pipe icing along one side of the wall and stick to the base, then pipe icing to the sides of the end and stick to the side wall, continue until the shell of the house has been created. Then decorate the roof and leave for a few hours before finally sticking the roof to the building. Decorate with coloured icing and sweets as you desire.
