Homemade Burrito

Ingredients:

  • Taco Seasoning: 1 garlic chopped or crushed
  • 2tsp Chilli Powder (your choice mild or hot!)
  • 2tsp Paprika (Smoked or Unsmoked)
  • 1tsp Onion Granules
  • 1tsp Garlic Powder
  • ½ tsp salt
  • ½ tsp Pepper
  • ½ tsp Ground Cumin
  • 1tsp Oregano
  • 1/2tsp Cayenne Pepper (be careful not to get it on your hands and then wipe your eyes!)
  • 1 onion (finely chopped)
  • 2 red peppers (finely sliced)
  • 400g Minced Beef
  • Tortilla Wraps
  • Tin of Chopped Tomatoes
  • Grated Cheese

Method:

In a small bowl make up the ‘Taco seasoning’ and leave to one side. (This can be used for a variety of dishes and on chicken, lamb or beef. Good seasoning for BBQ’s if mixed with some olive oil)

Chop up the onion and slice up the red pepper thinly.

Fry the onion gently in 1 tablespoon of oil until it is soft, add the red peppers and cook until soft (Must be on a low heat)

Add the mincemeat and cook until browned.

Add the Taco seasoning and mix together until everything is coated.

Add enough water (approximately 250ml) to make a thick sauce and simmer until most to the water has evaporated and the sauce is thickened).

Get some Tortilla wraps and place a large spoonful of minced beef mixture in the centre of the wrap, and fold the sides over. Then fold the top down and the bottom up, so the meat is encased in the wrap.

Place the filled wrap upside down (so the fold is at the bottom of a tray) and spoon over chopped tomatoes (not too much juice as they will become soggy) and sprinkle over your choice of grated cheese.

Bake in an over for 15 minutes Gas mark 4, 180C.
